Finally an Amazing Meatloaf

Been years since I had an amazing homemade meatloaf about since I moved out of my parents house at eighteen. Since the awesome wedding oven we got Ive been going on and on about finding a great recipe so I could make some meatloaf. When I saw this pin I had to make it.

Recipe:

Skinny Meatloaf Cupcakes with Mashed Potato Frosting
Ingredients:

For the Meatloaf Cupcakes:

1.3 lb 93% lean ground turkey
1 cup grated zucchini, all moisture squeezed dry with paper towel
2 tbsp onion, minced
1/2 cup seasoned breadcrumbs
1/4 cup ketchup
1 egg
1 tsp kosher salt
For the Skinny Mashed Potato "Frosting":

1 lb (about 2 medium) Yukon gold potatoes, peeled and cubed
2 large garlic cloves, peeled and halved
2 tbsp fat free sour cream
2 tbsp fat free chicken broth
1 tbsp skim milk
1/2 tbsp light butter
kosher salt to taste
dash of fresh ground pepper
2 tbsp fresh thyme
Directions:

Put the potatoes and garlic in a large pot with salt and enough water to cover; bring to a boil. Cover and reduce heat; simmer for 20 minutes or until potatoes are tender.Drain and return potatoes and garlic to pan. Add sour cream and remaining ingredients. Using a masher or blender, mash until smooth. Season with salt and pepper to taste.

Meanwhile, preheat the oven to 350°. Line a muffin tin with foil liners.
In a large bowl, mix the turkey, zucchini, onion, breadcrumbs, ketchup, egg, and salt.Place meatloaf mixture into muffin tins filling them to the top, making sure they are flat at the top.

Bake uncovered for 18-20 minutes or until cooked through. Remove from tins and place onto a baking dish.

Pipe the "frosting" onto the meatloaf cupcakes and serve.




My outcome and changes:

This is actually a weight watchers recipe but I kind of changed all the things that made this skinny what can I say I love all my ingredients full fatted. So Instead of turkey I used lean ground beef. And then all then all the non fat/low fat I used what ever I already had.

The flavor of the meat loaf was great. I wasn't a fan of the cup cake portion. And it wasnt as beautiful as the pictures but is it ever. My down fall was that I forgot to pat the zucchini dry.... oops so there was alot of moisture in the tins. So important step. Oh well I think I had done it as a normal meatloaf then it would have been turned out fine one way or an other. I personally didn't like the thyme in the potatoes just not really a fan. Would have loved it with rosemary. Also pipping the potatoes was horrible I tried to use my pipping bag but my tip was to small and so that was a disaster. Ended up with a simple zip lock with the end cut off.

My family loved it both boys cleaned their plates so always a plus. And if I find a pin the boys love it will be made again. Although I will most likely switch it up.
